Overview;
Here at the dawn of the 21st century we find ourselves confronted with problems that threaten our very existence as a species.   Reasonable and effective solutions require that we change our lifestyles in some very substantial ways.  One of the most significant is how we grow and distribute food.

Canning is a process that is used to preserve many different kinds of food.   We do it by putting food in Mason Jars and processing them in a Steam Kettle under 5-20lb. of pressure.   This simultaneously cooks and disinfects the food.

The air we breathe and all foods in their natural state contain microorganisms, such as molds, yeasts and bacteria as well as enzymes. Food spoils when enzyme, mold, yeast and bacterial growth is not controlled. Proper, safe home canning procedures control the growth of spoilage microorganisms allowing us to keep food beyond its normal storage period.

Home canning is not complicated. It is a simple procedure that applies heat to food in a closed glass jar to interrupt the natural decaying that would otherwise take place.

In an effort to spread the knowledge and encourage the use of canning on the grass roots level, we are offering workshops.
